Juicy pork neck marinated in garlic and fresh rosemary gives this light summer dish its rich flavour. A crunchy salad of cucumber, radishes, spring onions and chilli, brightened with lime juice, basil and mint, makes the perfect contrast to the meat. Simply serve the grilled pork neck with the salad and scatter over shavings of Parmesan.
Finely chop the garlic cloves. Season the pork neck with salt and pepper, rub it with the garlic and sprinkle with chopped rosemary on both sides. Leave the meat to marinate, ideally overnight.
Peel the cucumber, remove the seeds and cut it into thin strips, along with the radishes and spring onions. Deseed the chilli pepper and chop it finely. Halve the basil and mint.
Mix all the vegetables in a bowl, drizzle with oil, season with salt, pepper and lime juice and toss thoroughly.
Sear the pork neck on a hot grill on both sides until golden brown.
Serve the grilled pork neck with the vegetable salad and finish with shaved cheese.
