Hake, also known as sea pike, is a predatory sea fish. It is prized for its tasty, lean white flesh. In this Scandinavian-style recipe, the fish is baked with garlic and herb butter, lemon and breadcrumbs.
Bone the hake if you can, cut it into portions, season with salt and drizzle with lemon juice. Leave to rest.
Preheat the oven to 200 °C in good time.
Melt the butter and use part of it to grease a baking dish well.
Arrange the rested fish portions in the dish and brush them with the beaten egg.
Sprinkle with breadcrumbs, drizzle with butter and place in the oven heated to 200 °C. Bake for about half an hour until golden, brushing the surface with the pan juices every ten minutes.
