The combination of nuts and honey never disappoints, and this cake is no exception. A tender pastry base is filled with a rich mixture of honey, hazelnuts, raisins and dried plums. It makes 12 portions and takes about 65 minutes to prepare.
Melt the butter in a saucepan without boiling it, then set aside. In a food processor, beat the sugar, whole egg and 2 egg yolks. Gradually add the flour with the salt, then finally pour in the melted butter. Turn the dough out onto a floured surface, work it together, wrap it in cling film and chill in the fridge until firm.
Roll out the chilled dough and place it in a baking tin greased with butter. Trim the overhanging dough with a rolling pin: simply run the rolling pin over the edge of the tin and the dough will come away neatly. Roll out the remaining dough and use a pastry wheel to cut decorative strips for decorating the cake.
Heat the butter and honey in a saucepan. Stirring constantly, add the icing sugar. Then stir in the egg yolks, cream, Czech rum (tuzemák), chopped hazelnuts, raisins and dried plums.
Pour the still-hot filling evenly into the tin lined with the dough and decorate the edge all around with strips of the remaining dough. Bake in an oven preheated to 160 °C for about 40 minutes.
