Hermelín doesn't have to end up only in brine or in a spread. Try making crispy cheese balls with ham, onion and chives. They taste great warm or cold and go beautifully with potatoes prepared in any way or with a fresh vegetable salad.
Grate the Hermelín into coarse strips and grate the potato finely. Finely chop the onion, ham and chives.
Add the eggs, salt and seasoning and mix everything together.
Work in a little breadcrumbs and flour so the mixture can be shaped into patties.
Make a batter from the egg, milk, plain flour and salt, dip the patties in it and fry them in hot oil.
Place the fried patties on kitchen paper to drain off the excess oil.
Serve with potatoes prepared in various ways or simply with a vegetable salad.
