Homemade Farmhouse Baguettes or Rolls

Crisp, golden bread with a fragrant crust is easy to bake at home. All you need is flour, water, yeast and a little patience while the dough proves. The dough is divided into eight pieces and baked as baguettes or small rolls that go well with breakfast or supper.

Method

Sift both flours into a bowl, stir in the salt and make a well in the middle. Put the sugar into the well, pour in part of the lukewarm water, crumble in the yeast and leave it to rise for about 15 minutes. You can just as well make the yeast starter separately.

Add the rest of the water and work the dough, then leave it to prove for 45-60 minutes.

Knead the proved dough on the worktop and divide it into 8 pieces. Shape each piece into a small ball and roll it out into an oblong baguette.

Meanwhile heat the oven to 180-200 °C and line a baking tray with baking paper. Roll the baguettes in the plain flour, place them on the prepared tray, make slashes in them and leave them to prove.

Put the tray with the bread into the preheated oven and bake for about 20-30 minutes until golden brown.
