Mirabelle jam is a taste of summer. Mirabelles grow abundantly along roadsides, and there is nothing easier than picking them and making a delicious homemade jam.
Wash the mirabelles, remove the stalks, put them in a saucepan with a little water and cook until soft. Then press them through a sieve.
Boil the sieved mirabelles rapidly for 20–30 minutes.
Then add the sugar in batches so that the boil is not interrupted. With the last batch of sugar, add the citric acid dissolved in a little water.
Fill the boiling mirabelle jam into clean, dry jars, wipe the rims, seal with lids and turn upside down. Leave to cool and store.
