Buying mustard at the shop is easy, but making your own will bring you far more joy. According to chef Roman Paulus, all you need is mustard seeds, beer, turmeric, vinegar, honey and tarragon. The magic is that you can tailor it to your own taste – try swapping the beer for white or red wine. Leave the mixture to rest and you can enjoy your homemade mustard the very next day; in the fridge it will keep for several weeks.
