Homemade pickled carp rolls are a great cold treat that you can prepare all year round. With our recipe, the process is simple and even a less experienced cook can manage it. Just follow the layering and the vinegar brine.
Fillet the carp and season generously with salt.
Place them in a container and put in the fridge.
After two days, take them out of the fridge, rinse with water, cover with vinegar brine made with 1 part water to 1 part vinegar, and return to the fridge.
After another two days, remove them from the fridge again and remove the bones and skin.
Cut them into strips or cubes and layer them alternately in a container: a layer of fish, then strips of onion, about 4 pieces of each spice, and sauerkraut (grated vegetables can be omitted).
Pour over the brine prepared by boiling 1 part vinegar and 4 parts water with salt.
Add bay leaf, whole allspice and whole peppercorns, and put the closed container in the fridge.
After just 4 days you can enjoy the zavináče. Serve with bread rolls.
