Housky (Czech Braided Bread Rolls)

These homemade housky are quick to plait, quick to bake and even quicker to disappear. You can easily adapt the recipe and replace part of the plain flour with spelt flour. Before baking, sprinkle the rolls with caraway seeds, poppy seeds or sesame seeds, as is traditional. Fluffy and crisp, they are nothing like the shop-bought ones.

Method

Pour the milk into a bowl, add the yeast and stir it in. Leave the starter to rise, then add both flours along with the butter, salt and sugar. Work into a smooth dough; if it is too stiff, pour in a little water or milk.

Leave the dough to rise until it has doubled in volume.

Then divide it into 10–12 pieces weighing 70–80 g and roll each one into a ball. From each ball, roll out 3–4 strands and plait the rolls. Always tuck the ends of the dough underneath.

Preheat the oven to 220 °C.

Arrange the rolls on a baking tray lined with baking paper and leave them to prove for another 15 minutes. Then brush them with water, sprinkle with salt, poppy seeds or sesame seeds and bake for roughly 10–15 minutes until golden.
