A hearty lentil soup that warms you up and really fills you. The lentils simmer with carrot, celery, potatoes and a bay leaf, then the soup is thickened with a roux of flour and sweet paprika with garlic. It is served with golden fried paprika sausage and fresh parsley. You can sharpen the flavour with vinegar or sour cream.
Rinse the lentils, put them in a pot with the peeled and chopped carrot and celery, add the bay leaf, cover with water or stock and bring to the boil. After about fifteen minutes add the chopped potatoes and cook everything until tender. Meanwhile, soften the onion in a little oil, dust it with flour and paprika and fry briefly, pour in the stock and stir well straight away, then add it to the lentils and simmer everything together with the grated garlic. Season with salt and pepper.
Cut the sausage into rounds and fry it dry in a pan until golden.
Ladle the soup into bowls, add the fried sausage and garnish with parsley. You can sharpen the flavour with vinegar or sour cream.
