Marinated Fish Fillet Skewers

Pieces of fish fillet are marinated with lemon juice, oil, bay leaf and thyme and left to rest for an hour. They are then wrapped in English bacon, threaded onto skewers alternately with mushrooms and grilled until golden. The skewers taste wonderful with grilled vegetables or sautéed potatoes.

Method

Cut the fish fillet or freshwater fish into even pieces, removing the bones beforehand. Put the pieces in a bowl, add the juice squeezed from the lemon and 1 dl of oil, season with salt and pepper and add the bay leaf and thyme. Leave the fish to marinate for 1 hour. Meanwhile, clean the mushrooms and slice them, or you can leave the caps whole.

Then wrap each piece of fish in a slice of English bacon and thread it onto a skewer, always alternating with a slice of mushroom. If you like, you can also alternate the meat and mushrooms with any vegetables (pepper, courgette, aubergine, onion, etc.).

Turn the fish skewers on the grill often and brush them with oil. Grill them until golden brown.

Serve the fish skewers with any side dish – grilled vegetables, sautéed potatoes, or simply a slice of fresh bread.
