A fresh salmon tartare makes an elegant appetiser that easily replaces classic open sandwiches. All you need is good-quality fresh salmon, capers, chives and a squeeze of lemon. Serve it on crisp toasted bread, topped with grated hard-boiled egg and alongside a leafy salad with a light vinaigrette. It all comes together in just 30 minutes.
Remove the skin from the salmon and cut it into very small cubes. Add the finely chopped, peeled onion, a tablespoon of chopped capers and pour in the lemon juice. Finally add the chopped chives, season with salt and pepper, mix thoroughly and leave to stand for 4 to 5 minutes. Season the rested mixture again to taste, add a few drops of olive oil and mix once more.
Toast the slices of bread in olive oil until crisp. Let the toasted slices cool for a moment, then spread the prepared tartare on top. You can also add a few pieces of capers and chopped onion. Grate the hard-boiled egg over the top and garnish with a piece of chive.
In a bowl, mix the wine vinegar, 2 tablespoons of olive oil, salt and pepper. Add the dressing to the washed and dried salad just before serving.
Serve the salmon tartare with toasted bread on a plate with the leaf salad dressed with the vinaigrette.
