In a bowl, mix the Dijon mustard with 5 tbsp of olive oil and the juice of half a lemon. Season with salt and pepper to taste and mix thoroughly.
Open the salt grinder and pour the entire contents into a bowl. Add a little coarsely ground pepper, the cane sugar and the zest of a thoroughly washed lemon, and mix everything together. Spread half of the mixture evenly over a large piece of cling film. Place the salmon fillets (skinless) on the salt mixture and cover with the remaining half. Wrap the salmon tightly in the cling film, place in the fridge and leave to marinate for 24 hours. Rinse the marinated salmon fillets under running water and dry with paper towels. Coat them on all sides with finely chopped chives and cut into thin slices.

Cut the bread into slices and fry on both sides in a pan in hot olive oil.
