Redcurrant and blueberry jam is a brilliantly red treat that pairs the fresh tartness of redcurrants with the full, sweet flavour of blueberries. Thanks to the 3:1 gelling sugar it comes together in no time, and all you need is fruit, sugar and a saucepan. Spread it on fresh bread, stir it into yoghurt or use it as a filling for cakes.
Strip the redcurrants from their stalks and weigh out 1 kg.
Sort through the blueberries, rinse them and weigh out 0.5 kg.
Mix the fruit and the gelling sugar together well in a saucepan.
Bring everything to the boil while stirring constantly and leave to simmer for at least 5 minutes, stirring all the time. Skim off any foam and fill the jam into prepared jars right up to the rim.
Seal the jars, turn them upside down and leave them standing on their lids for about 5 minutes.
