Minute-Style Pork Schnitzel Special

Do you love pork schnitzels? To make them melt in your mouth, it takes more than just buying the meat, coating it in breadcrumbs and frying it. Try letting the cutlets rest in a marinade of pepper sauce and dried garlic, frying them briefly and then finishing them in the oven. The result is juicy schnitzels that taste great with potatoes or just plain bread.

Method

Cut the pork leg into thicker slices and pound them through a sheet of cling film.

Season the meat lightly with salt, sprinkle it with dried garlic and brush one side lightly with pepper sauce. Put it in a container and leave it to rest in the cold for at least 1 hour.

Then turn on the oven and let it heat up to 200 °C.

Coat the rested cutlets in flour, beaten eggs and breadcrumbs.

Heat the butter in a frying pan and fry the cutlets over a low heat for 3 minutes on each side. Then transfer them to a roasting tin, ideally lined with a silicone baking mat or baking paper.

Place slices of butter on the pre-fried cutlets, cover them with the second part of the roasting tin, put it in the preheated oven and bake at the highest setting (I have a gas oven) for 10 minutes.

Serve the finished cutlets with potatoes, mashed potatoes or just bread.
