No-Bake BeBe Biscuit Log with Bananas

BeBe štola, sometimes called a roof, is one of the most popular no-bake desserts in the Czech Republic. Layers of butter biscuits, rum quark cream and a whole banana make a delicious treat that even a beginner can manage. Just leave it overnight in the fridge and then slice it into individual pieces.

Method

01.

First make the cream. Cream the butter with the sugar, add the quark and rum and mix thoroughly.

Cut a larger sheet of foil and cover it with the light biscuits in a 7x3 rectangle.

Spread half of the cream over them.

04.

The next layer is made of the dark biscuits in rows of 7x3, and the rest of the cream goes on top.

05.

Lay the peeled bananas along the middle row.

06.

Carefully lift the longer sides of the foil and fold them evenly over the banana to form a roof shape.

07.

Leave to firm up in the fridge for a while.

08.

Meanwhile make the icing from the cooking chocolate and the remaining butter, ideally by melting them in the microwave. Stir together.

09.

Spread the icing over the top of the štola and smooth it evenly down the sides.

10.

Leave to rest overnight in the fridge, then cut into individual slices.
