The pork shoulder is first seared briskly in a roasting tin, then poured over with beer and mustard and slowly braised in the oven. Onion, garlic and caraway give the meat plenty of flavour, while the vegetables and potatoes turn it into a hearty eintopf. At the end the lid comes off and the meat is roasted until golden. The result is tender pork that falls apart at the touch of a fork.
