Fruit dumplings are one of the most popular sweet dishes, especially in summer when plenty of fresh fruit is in season. The dough made with butter, quark and all-purpose flour is soft and easy to shape. Fill the dumplings with apricots, strawberries or blueberries, then serve them with grated quark, sour cream and sugar.
Dough preparation: In a bowl, beat the butter with the sugar, then gradually beat in the eggs. If the eggs are small, you can use three. Beat everything until fluffy.
Mixing with quark: Add the quark and the flour, into which you have mixed the cornflour or pudding powder.
Resting the dough: Knead the dough and leave it to rest in the fridge. It is best to prepare it in the morning; the dumplings will then be easier to shape.
Shaping the dumplings: Put the fruit you have available into the dumplings. Apricots, strawberries or blueberries work well.
Cooking the dumplings: Cook them in boiling water; once they float to the surface, they are done. Then prick them a little with a fork so the steam can escape, and lightly grease them so they do not stick together.
Serving: Sprinkle them with grated quark and icing sugar, and garnish with sour cream. If you do not want quark, you can dust them with sugar and pour over unwhipped whipping cream. Poppy seeds with sugar are also a good choice.
