A classic way to use up a bumper crop of homegrown cauliflower. The florets are first briefly cooked in salted water with lemon juice, then packed into jars and covered with a sweet-and-sour vinegar brine flavoured with spices. The jars keep all winter as a great side dish.
Rinse the cauliflower, break it into florets and clean it. Put it into salted boiling water to which we have added lemon juice. Cook the cauliflower, but be careful not to let it get too soft.…
