Pita Bread

Pita bread is one of the most popular side dishes, especially in Middle Eastern cooking. It is baked in a very hot pan, which makes the bread puff up beautifully. That means you can not only tear it off and eat it alongside a meal, but also fill it. It goes wonderfully with traditional specialities such as hummus or falafel, and it works just as well with a vegetable ragout.

Method

Mix the warm water with the yeast, sugar and salt. Add the flour and work the mixture into a smooth dough. Shape it into a neat ball, cover it with a tea towel and leave it to rise in a warm place for about 1 hour.

Once the dough has risen, divide it into 6 – 7 pieces and shape each one into a small ball. On a floured work surface, roll them out into thin flatbreads and leave them to rise for a little while longer.

Bake the pita in a very hot pan without any fat. Turn them after about ten seconds, until the bread puffs up.
