Plecovník (Czech Bread with Smoked Pork Shoulder)

Plecovník is a bread with smoked pork shoulder hidden inside, so you get fresh bread and fragrant smoked meat in one. You make it from sourdough dough, which you leave to rise, and bake it in the oven. It is a great snack and a satisfying meal.

Method

Shape the risen dough into an oval, place the smoked pork shoulder in the centre, seal the dough and transfer it to a baking tray lined with baking paper. Depending on size, leave to rise under a tea towel for 1–2 hours.

Preheat the oven to 220 °C.

Brush the bread with lightly salted water and place it in the oven heated to 220 °C.

After about 20 minutes, reduce the temperature to 180–200 °C and continue baking. Baking time depends on the size of the bread, usually 50–70 minutes.

Tip for a gas oven: During baking, you can place 2 x 500 ml ovenproof jugs of water at the bottom so the bread stays softer.

06.

After taking the bread out of the oven, brush it once more with salted water.
