Pork Bigos from a Cauldron

Bigos is a traditional Slavic dish similar to Czech segedín, but it is enriched with dried plums and fresh cabbage alongside sauerkraut. Chef Roman Paulus shows how to prepare it in a cauldron in the garden or on a camping trip, much like goulash; however, you can easily make it in a pot on the stove. It won't dirty many dishes, and all you need as a side is fresh bread or potatoes baked in embers.
