Pork neck slices are baked on a bed of leeks with mushrooms and a mayonnaise-ketchup mixture. The meat is tenderised and seasoned first so it turns out beautifully soft and juicy. An easy oven-baked lunch or dinner.
Tenderise the pork neck slices, season them with salt, pepper and your favourite seasoning.
Scatter the leek, cut into rings, over the bottom of a roasting tin and place the prepared meat slices on top.
Slice the mushrooms and scatter them evenly over the meat.
In a bowl, mix the mayonnaise, ketchup and Worcestershire sauce, then pour the mixture over the meat and mushrooms.
Place the roasting tin in the oven and bake for about an hour at 180 °C, until the meat is tender.
