Diced pork tenderloin is coated in a homemade potato pancake batter and fried until golden. The result is juicy meat in a crispy coating, perfect for a festive lunch or a casual party. Serve with leaf spinach or a fresh vegetable salad.

Method

Peel, clean and wash the potatoes, then grate them into a bowl using a coarse grater. Peel and crush the garlic. Add 200 grams of flour, all the eggs and the garlic to the potatoes, then season to taste with marjoram, cumin, pepper and salt.

Cut the pork tenderloin into cubes and season with salt and pepper.

Heat the oil in a deep frying pan or saucepan. Coat the meat in the remaining flour and then in the potato pancake batter. Put the pieces straight into the hot oil and fry gently until golden. Place the cooked meat on kitchen paper to drain off excess fat.

Serve the pork tenderloin with leaf spinach or vegetable salads and garnish with cherry tomatoes.
