Rajská (Czech Beef in Tomato Sauce)

Rajská sauce with beef is one of the Czech classics that never disappoints. The mildly sweet and tangy tomato sauce, flavoured with cinnamon and lemon, is served with tender beef and bread dumplings. It takes time to prepare, but the result is well worth it.

Method

01.

Clean the beef and cook it with one peeled onion, allspice and bay leaves until tender. Leave the stock to cool.

Peel the second onion, chop it finely and sweat it in oil. Add the tomato purée and cinnamon and fry briefly.

Pour in the cooled stock and add half a scrubbed lemon, whole. Squeeze the juice from the remaining lemon.

Stir the plain flour into a glass of water, thicken the sauce with it and simmer for about 15 minutes.

Blend the finished sauce, or strain it through a fine sieve.

06.

Sweeten the tomato sauce to taste, add lemon juice for acidity and season with salt. Serve with slices of tender beef and bread dumplings.
