Got some cooked rice and a few vegetables left in the fridge? Then this recipe is for you. In twenty minutes you can turn them into golden fritters fragrant with basil and garlic, delicious on their own or with the basil dip.
In a bowl, mix the egg, milk, salt, pepper and plain flour. Add the cooked rice, grated carrot, chopped leek, basil and crushed garlic and mix everything thoroughly.
Heat the fat in a frying pan, make small mounds and carefully spread them with a spoon into small fritters, then fry them on both sides over a low heat until golden brown.
Make the basil dip by mixing the white yogurt, tartar sauce and basil.
Serve as a main dish with mashed potatoes, or simply with a vegetable garnish.
