Roast chicken pieces are a simple classic that always pleases. The chicken pieces are first browned in oil, then finished in the oven and basted with the pan juices. The result is juicy meat with a delicious gravy that goes perfectly with fries or roasted potatoes.
Clean the chicken and cut it into 4 pieces. Wash the pieces and dry them thoroughly. Season the chicken with salt and pepper.
Heat the oil in a roasting tin and brown the chicken pieces on all sides. Pour in hot water and steam, covered, briefly, just for about 10 minutes. Then remove the lid and finish the chicken pieces in the oven.
During roasting, turn the pieces, baste them with the pan juices and pour over hot water.
Chicken pieces are usually done in about 25-30 minutes. If you want more gravy, dust it with flour, fry it briefly, pour in water and simmer.
Serve the roast chicken pieces with fries or roasted potatoes.
