Tender salmon with a delicate herb sauce will not disappoint. The salmon is fried until golden and served with a fragrant sauce made from fresh herbs. You can enjoy it with baked or boiled potatoes, or even with toast.
The salmon bought in the supermarket is already gutted. Remove only the fins, and the head if desired, then cut it lengthwise into 2 halves and then into individual portions. Alternatively, do not cut the salmon in half and cut it into horseshoe-shaped pieces.
Before frying the fish, prepare the base for the herb sauce: chop the parsley and basil leaves finely. In a small amount of milk, whisk 1 tbsp of plain flour, mix with the rest of the milk and the cream.
Drizzle the salmon pieces with lemon juice, lightly dust with flour and place them in a pan with heated butter. Season the fish with salt, sprinkle with caraway and fry on both sides until golden.
When the salmon is fried and tender, remove it from the pan.
Into the pan with butter (after frying the salmon), add the chopped herbs, let them warm through and then pour in the milk and cream. Season with salt, and pepper if desired.
Pour the herb sauce over the fried salmon and garnish with a slice of lemon. Serve with baked or boiled potatoes; it also tastes good with toast.
