This savory zucchini and cheese tart with herbs is a guaranteed hit. With puff pastry, it looks like a masterpiece. Serve it warm or at room temperature, perhaps with a simple salad.
Roll out the puff pastry on a floured surface to a thickness of 4 mm into a 25 x 33 cm rectangle. Place it on a 20 x 28 cm baking tray lined with baking paper, letting it cover the edges too. Chill for 30 minutes.
Preheat the oven to 200 °C. Melt the butter over medium heat and fry the shallots and garlic in it for 4–5 minutes until softened. Pour in the wine and cook for 2–3 minutes until completely absorbed.
Transfer to a bowl. Add the crème fraîche, cheese, eggs, herbs and lemon zest, season with salt and pepper and mix. Spread the mixture over the pastry and scatter over the sliced zucchini. Drizzle with olive oil and season with salt and pepper. Brush the edges of the pastry with egg and bake for 25–30 minutes until golden brown.
Sprinkle with parsley and serve hot or at room temperature. You can serve it with a simple leaf salad.
