Sweet yeast dumplings are a favourite treat from childhood. In summer you can fill them with fresh fruit, at other times with jam, Nutella or banana and chocolate. You can cook them in a dumpling steamer, a steam pot or on a cloth. Try them coated in quark, Granko and melted butter.
Dough preparation: Put the ingredients into the bowl of a bread machine in the usual order – first the liquids, i.e. lukewarm milk and egg, then the lightly mixed dry ingredients, and finally crumble the yeast on top. Select the Dough programme. If you do not have a bread machine, make the dough in the traditional way.
Dough rising: After kneading, leave the dough to rise, but take it out before the programme ends, otherwise it would escape from the bread machine.
Filling the dumplings: Divide the risen dough into portions and fill as you like – with jam, rum pralines, Nutella, a piece of banana with chocolate or fresh fruit.
Preparation for cooking: Put water in a larger saucepan and a fully opened dumpling steamer insert, and grease it with oil.
Cooking the dumplings: Arrange the risen dumplings on the insert with larger gaps, the water must be boiling, put on the lid and steam for 8–10 minutes depending on size.
Pricking the dumplings: After removing the lid, immediately prick the dumplings with a skewer and take them out.
Continuing cooking: Top up the water and continue.
Alternative cooking method: You can also stretch and tie a cloth over a larger saucepan and cook the dumplings on it. Cover with another lid of the same diameter. Check the water and top it up so it does not boil away. This is how our grandmothers cooked dumplings.
Using a steam pot: Owners of a steam pot can relax. Grease the bottom and sides of each container where the dumplings will touch with oil so they do not stick. They cook very well there. If you are not going to eat the dumplings straight away, you can lightly grease them with oil.
Serving: Serve the finished dumplings on a plate sprinkled with grated hard quark, Granko and sugar, and pour over melted butter.
