Kapustnica is a hearty Slovak soup that in this version comes from Topoľčany. It combines sauerkraut, smoked pork ribs, sausage and potatoes with mushrooms and spices. Thanks to the smoked stock and garlic seasoning, it is full of flavour and wonderfully warming. Serve it with bread rolls or fresh bread.
Cook the smoked ribs in water until tender, then remove them and add sliced sauerkraut, diced potatoes and sausage to the smoked stock. Pour in water up to three-quarters of the pot. Cook until tender, adding the mushrooms and all the spices, including a pinch of salt, about halfway through cooking. Meanwhile, pick the cooked meat off the ribs and cut it into small pieces. In a pan, soften the onion in oil, fry it until golden, then add the chopped meat. Fry everything briefly and add the whole mixture to the soup, which is almost cooked. Cook for a little longer, then thicken the soup gently with flour and a little water. Cook for about 10 minutes, then turn off the soup, season with crushed garlic and add salt if needed.
Be careful with salt, as the smoked ribs are already salty.
Serve with bread rolls or fresh bread.
