Turkey Breast with Liver Stuffing

Juicy turkey breast filled with a fragrant stuffing of turkey liver, toast bread and fresh parsley. We roll the meat up, wrap it in foil and bake it until golden, while the extra stuffing bakes separately in a tin. The result is a festive main course that goes beautifully with potatoes. Serve it for a special occasion or a relaxed family dinner.

Method

Flatten the turkey meat, season it with salt and pepper.

Prepare the stuffing. Cut the bread into small cubes, pour the milk over it and leave it to soak. Then mix the squeezed bread with the beaten eggs, chopped liver, chopped parsley, salt and pepper and stir everything together thoroughly.

Put some of the liver mixture on the meat and roll it up carefully. Wrap the meat in buttered foil, place it in a roasting tin, add a little water and put it in the oven to bake. Bake the remaining stuffing separately in a greased and floured tin. Take the tender meat out of the foil, pour the pan juices over it, melt the butter in them, return it to the oven and bake until golden, basting occasionally.

Cut the turkey with the stuffing into slices and serve with potatoes and the separately baked stuffing as a main course.
