Vegetable tarhony is a meatless one-pot dish cooked much like a risotto – the pasta simmers with onion, celery, pepper, courgette and tomatoes. Soy sauce and seasoning give it plenty of flavour, and it is ready in 40 minutes. Serve it on its own or as a side dish with meat or fish, sprinkled with shavings of pecorino if you like.
