Smoked salmon from the grill is a delicious dish you will quickly fall in love with. We'll show you how to prepare a juicy, tender and above all simple salmon fillet, even in your own garden. You'll learn how to cure and marinate the fish and which side dish goes best with smoked salmon. Discover the tricks behind Norwegian salmon smoked in warm smoke with honey-mustard sauce and cucumber salad and impress your guests at your next summer barbecue.
Cucumber salad: Grate the peeled cucumber coarsely into a bowl, season with vinegar, sugar and salt and mix. If needed, add a little water. Leave to stand for 15 to 20 minutes, then season again to taste.
Honey-mustard sauce: Put the mustard into a deeper bowl and, whisking constantly, gradually pour in 100 ml of olive oil. Then whisk in the honey, add a dash of wine vinegar, season with salt and stir in the finely chopped dill.
First cure the salmon fillet, skin and scales on, in a mixture of salt and sugar for about 3 hours, then rinse it under running water and pat it dry.
Add hardwood chips, soaked in water for at least 30 minutes, to the hot coals to prepare the grill for smoking.
Put both mustards and the chopped herbs into a bowl and mix. Spread the marinade over the top of the salmon and smoke it over indirect heat with the lid closed on the grill. For medium doneness, smoke for about 15 minutes at 180 °C.
The salmon does not have to be fully cooked; medium is enough. Because the fillet is thinner at the tail than at the head, you can then serve both guests who prefer less cooked fish and those who like it more well done.
Cut the lemon in half and press the flesh into the cane sugar. Place the prepared lemon directly on the hot part of the grill and let the sugar caramelise. You can also warm the garlic baguette on the grill.
A toasted garlic baguette, caramelised lemon, cucumber salad and honey-mustard sauce all make good side dishes. Serve separately as a buffet.
