Wild Boar Goulash with Bacon and Red Wine

Game dishes often draw us to a hunting lodge or a restaurant, but with good meat you can cook game at home too. This wild boar goulash is slowly stewed with onions, smoked bacon and red wine until meltingly tender. It is then thickened with stale bread and flavoured with garlic and game seasoning. A hearty dish that goes well with bread dumplings or boiled potatoes.

Method

01.

First prepare the ingredients: peel the garlic. Peel the onions and cut them together with the bacon into small cubes. Clean the meat and cut it into cubes.

Heat the lard (or oil) in a pot and gently fry the chopped onion with the bacon until soft.

Add the cubed meat, season with salt and pepper.

Fry the meat until it seals and all the liquid evaporates. Then pour in the wine and let it evaporate.

Top up with stock or water, add the seasoning, cover with a lid and stew until tender for about 2-2.5 hours.

Press the garlic into the tender meat.

Thicken the goulash with grated stale bread and let it simmer for about 10-15 minutes. Be careful, the sauce thickens a lot, so add more liquid if needed.

Finally season with salt and pepper and serve.
