Yeast dumplings are a staple of traditional Czech cooking and taste best with sauces or steamed cabbage. To be fluffy and tender, they need well-prepared dough and a little patience while it proves. Here is how to make them in a bread machine and shape them properly.
Preparing the liquid ingredients: Pour the milk into the bread machine. If you are using an egg, whisk it into the milk. If you are not using an egg, stir a tablespoon of olive oil into the milk.
Adding the dry ingredients: Cover the milk with the flour, add the salt and sugar and finally sprinkle the yeast on top.
Proving the dough: Set the bread machine to the Dough programme, switch it on and let it knead and prove the dough.
Shaping the dumplings: Once the dough has proved, turn it out and divide it into two pieces. Shape two rolls, cover them with a tea towel and leave to prove for another 10 minutes.
Getting ready to cook: Meanwhile, pour a little water into a pot. As soon as it boils, put a steamer insert into the pot and arrange the dumplings on it.
Steaming the dumplings: Steam for about 25 minutes, topping up the pot with boiling water as you go.
Checking they are done: To test whether a dumpling is cooked, pierce it with a skewer. When you pull it out of the dumpling, the skewer must be clean and dry, with no dough sticking to it.
